ich denke, englisch genügt volkommen :) denn das is die internationalste sprache english: i think english is by far enough :) after all it's the most international language Well, by numbers more people speak Hindi or Chinese I guess. That still isn't a argument to publish the help pages in Chinese ...
As you can see on http://cyberduck.ch/help/en/ the help is localizable (but has only been translated to catalan so far).
If you want to contribute a translated help for any language, you can just download the english pages, translate them and send them back to feedback@cyberduck.ch.

The log drawer is no more included because of its slow performance when logging large directory listings and numerous crashes it caused. Better performance and stability outweighted the feature. If you still want to see the transcript you can use Console.app and lower the logging level in cyberduck ...
