If all of your accounts are offline, selecting this global available state will sign in any account you have set to sign in automatically at application launch.

You can turn that off in the Message History section of the Advanced Prefs.

the thing i miss the most is the "Connect All"/"Disconnect All" menu options. If i had a few of my accounts online, i could previously use the "Connect All" option to bring the rest online. Now I have to set ALL accounts to offline, then bring them all back online agai...

Right. But one thing that I think is a "must" and is preventing me from using purely Adium is audio/video chatting. I use this feature all the time in iChat AV. For the people that need AV, you'll need to keep iChat around because Adium won't get those abilities until gaim-vv really comes...
