I'm seeing the same issue (Mail.app stalling and needing to be force quit). I believe it's due to GrowlMail trying to post notifications about new IMAP messages before they're downloaded. It is GrowlMail causing it (unfortunately) - disabling it via the Mail Preference Pane causes the issue to stop...
