If you are using version .89.1, then you should be able to set this option in the official client, and Adium will honor it.

If you are using the 1.0 beta, then go to the 'Adium' menu and select 'Privacy Settings...'

Which method are you using to switch between apps? Adium remembers which Adium window I had in front when using both Command-Tab and clicking the dock icon, and using expose is pretty straight forward, I click on the Adium window that I want in front...

Long story short... Video support is not up to Adium, it's up to the protocols which Adium takes advantage of.

If it's happening with both Adium and iChat, then it's not a problem with the computer or programs...

So you would need to find out 2 things: 1. Are the ports for AIM open on her network? (5190-5220) and 2. Has she ever been able to connect from where she is?

Adium supports Gadu-Gadu accounts, you should be able to create a gadu-gadu account in the 'Accounts' preferences. That should work much better than a jabber transport...
