This is up to the message style to decide. You can either find a different one or edit the one you like

I can't think of anyway to do this currently in Adium, sorry. You could make a status that is mute and just put yourself on that status whenever you are working.

Does "show offline contacts" bring them up (albeit offline)?

Just not sure if Adium isn't showing them as online, or your buddy list has gone.
