Before you send a message to a contact, you should have a bar at the top of the conversation saying who you are sending to and which account you are sending from. THis dissapears after the first message. Also i think it remembers the last account you used.

Groups in Adium are flakey at times. I've never had Adium delete a contact, but it has forgotten from time to time that i moved them.
