to copy & paste a conversation you had and send it to someone else? or is there any way to send a conversation to someone else with copying and pasting? just wondering.

Go into the Adium Chat Transcript Viewer from the 'Window' menu.

That will allow you to view the conversation in text only, so you can copy/paste it to a message window :)

Copy-paste from the message view "works", but it often includes bits of stray formatting, usernames, etc...

As of one week ago I have been keeping track of bots entering selected channels on yahoo chat server. In order to do this I have located the "ByObject" which has a list of all the person that have ever enter these selected rooms. So I'm able to copy and paste this information on my blog as a warning to all using yahoo chat. Needless to say I have become very popular. :P
Any way make sure you have the "log" of your text in your Adium folder. Then click "Log Viewer" under the "Window" tab Right Click> Drag> Highlight the areas or text you want to copy then click the selected text field and say "copy" then open your text pad or another message window and "paste"
personally I don't keep a log, but I do need the users names.
