I "deleted" an AIM contact from my list on accident and now I want to re-add it. I right clicked the name, choose "delete," then hit "remove".

However, now when I go to Contact --> Add Contact, it doesn't show up.

I didn't realize that "Be careful. You cannot undo this action" meant that I can never re-add the contact to my list.

Is there anyway around this?

That is not what it means. Is it possible this person is just offline when you readd them?
