Encryption - how to use it, how to turn it off and on, etc.

Encryption in Adium is almost as bad as SCSI voodoo for me. I do not always run encrypted, but it seems that once I turn on encryption for a particular session, it becomes impossible to turn off encryption until I quit and restart Adium.
I also get requests to end/restart a conversation when changing locations and talking to folks. when this happens, I have to quit Adium to get it to send any information to my contact.
What am I missing about encryption? It seems both far too complex and that it ignores the dropdown box. GAIM users tell me that they have a button to turn encryption off and on, and that they can reset it with a switch.

I can't say I've felt this much like an idiot in *quite* some time

RTFM didn't help me, but I suppose hammering at the interface should have.
I'll have to test it out and see if it works for me, though. Thanks!

Well, first I tried the help files within Adium itself- no real luck there, the documentation helps get you online, but doesn't get you much into the guts of Adium.
I googled the various error messages, and didn't have much luck with that, either. I tried putting the error into the docs search on trac.adiumx.com - but that gave me too much information, none of which was easy to digest, so I gave up on that, too- a simple search on 'encryption' gave me fewer hits, but none of which was ready information. There was a link to the OTR website, which was moderately helpful, but only in terms of how it all worked, not specific information to my problem.
I suppose what would help is if there was a wiki that was true documentation, straight from 'cmd-q: quit - this exits Adium' to the finer details of the inner workings for the power users.
How would you go about canceling an encrypted chat if you had removed the encryption icon from the chat window?

Yep, that's exactly what I was trying to get across. Adium is a fantastic program, and my hat is off twice to the team that's programmed it- but it is lacking in the documentation category.
My hat's also off to the speed in which y'all are replying to the queries here!

As you yourself indicated, it's a matter of having or not having the documentation, time is a negligible factor a bit in OSS (in that malleability exists on some level, at least within Adium)
