How do I export my contact list, to, say, a universal XML format? I just want a file that contains everyone who I have in my list; primarily, I need the custom name I set for the contact, their actual display name as given by the IM servers, and the email address or screen name.

There's no export tool per se, although if you check ~/Library/Application Support/Adium 2.0/Users/Default/libpurple/blist.xml, it will have all your contacts listed in the manner you describe.
