I do not get any offline messages using Adium. Is there a way to get this to work?

Whether you get offline messages depends on whether the protocol you're using supports it.

XMPP/Jabber definitely supports it. Don't know much about the other protocols as i've no interest in them.

I get offline IMs from my girlfriend all the time and I have no idea how she does it.

He's probably using msn...
cybercrypt13, adium uses libpurple to handle msn stuff, this library is currently way off behind msn improvements, but right now is being updated to the latest msn protocol (14). Until that work is done, there's no way to get offline messages nor send custom emoticons nor change your PM.
