I just downloaded adium and on my display of my contacts, it displays the email address but I would much rather it displayed just the screen name since most of my contacts emails are jfdshbiaghjb@hotmail.com and I cant' seem to find an option to get rid of it.

Just set an alias through Get Info.

I use adium's addressbook integration for this!
