Hi,
When starting a new chat, with someone from Yahoo Messenger with whom I had been chatting the day before, the old chat window, the one from the previous day, appears, along with the contents of the "old" chat. I can make a new chat window, but it is a two or three step process. Since I'm new to Adium, I'm wondering if there is a preference I can set that will start each conversation with a new window?

It is not the old chat window, but a new one with the last lines of your previous chat.
This can be disabled/changed in Preferences>> General(the 2nd one, next to Accounts)>> uncheck "Show xx last messages in a new chat"
