I have had this problem through several versions now.
When I login to Adium it does not connect to GTalk. Finally once I go in and force it to connect it hangs at "Cancel" as if it is trying to connect. I also see the status symbol on the Adium icon while this is happening. The thing is however I am actually connected now and can talk even though its hung in a connecting state.
Has anyone else seen this?

I have also been having this problem... Adium 1.4.1, MacOSX 10.6.4.
I don't have my password saved in the program, so it asks me for my password, attempts to connect for a few seconds, and then asks for my password again. Occasionally, after a few tries with the password, it connects. Today, I have tried > 10 times and it has not connected.
Gmail is working fine, and GChat opens up within Gmail when I run it from the browser. AIM Is also working fine for me in Adium.
This problem started when I went to Adium 1.4 a few weeks ago.
I noticed a ticket from a few weeks ago on the bug site for a similar issue in a beta version (here: http://trac.adium.im/ticket/14444), but there's been no update of the bug.

And as soon as I posted it, I think I figured it out....
Google went back to SSL for GMail by default, so if you were signed in at one IP address, then move to another IP, you have to sign out of your Google sessions to reconnect using Adium. In G-mail, you can find the "Last account activity" at the bottom of the page... click "Details" and in the pop-up click "Sign out of other sessions."
As soon as I did this, the next time I entered my password in Adium, it connected to GTalk.

Well unfortunately I have been unable to get it working correctly. I've had to revert to adding GTalk as a Jabber account rather than GTalk because it keeps hanging and shows "Cancel" on the menu. Some days I have to disconnect and reconnect. Adium 1.4.1 OSX 10.6.5

I've posted my solution here in the beta section. Apparently it's been a problem for a few revisions. Hope that helps the rest of you.
I also tried the disconnect/connect method with failure. It seems like it's still attempting to connect - a time of ~8 mins to reconnect shows up if you look in the Accounts > Account List... section. Un-checking it and re-checking the GTalks account seems to stop this countdown and reset something.
