I really dislike my name as well as my friends name appearing along with the @ before the timestamp, cheapens the interface of the app quite a good deal for me yet couldn't find any option within settings to remove.

Any way to do this or at least a feature coming soon?

There are a quite a number of 'skins' available for Adium, some of which might satisfy your needs. For example, from the build in message styles, I know of Renkoo and yMous that allow you to not show your and the other user's names. For more, see adiumxtras.com.
