It's really annoying to click on somebody's name and begin to type a message when you see the last thing you talked about with them on the screen, and I disabled chat logging. Anything else I can do?

This feature, called message history, can be disabled in the "Message History" list item in the Advanced pref pane. You don't need to have logging turned off to disable message history.

Advanced -> Message History
