I've looked through everything and cannot find out how to export my contact list. Is it even possible and if so how?

I don't believe it's possible in Adium, but you can do it within the official AIM client.

Impossible from within Adium at this time. The Official client will do it easily, however, and it is then importable through the official client (Adium currently has no buddy list import/export features built-in).
