Why won't the sound sets appear on the dropdownlist in the preferences??
anyone have advice

Try checking in the ~/Library/Application Support/Adium 2.0/Sounds/ folder and see if there are any sound sets in the folder.

Are you on Case Sensitive HFS+? If so, rename your soundsets to the proper extension.
