I only want users in my contact list to be able to send me messages. How do I do this?

Set this privacy setting in an official client for the protocol you are using, and Adium will respect those settings.

IE, if you are talking about AIM, go on iChat and set this setting and log off. Now sign on with Adium, and these settings will be preserved.
