I looked through other posts, can't seem to find - why is there no checkbox on the AIM tab like for the MSN tab: "USE HTTP CONNECTION METHOD" ?

That's all's i need...

I tried to create another MSN and use that - to no avail - AIM itself has this option...

This should be in the Adium forums... moving it.

Check the proxy options on the Connection tab of your AIM account. There should be an option for HTTP proxy.
