Is there a way that I can have my contacts automatically form groups based on the IM account that they fall under? Or do I have to manually create the groups and drag the contacts to each one?

View > Show groups

I think this is kind of smart groups. We're working towards bringing smart groups to Adium, but don't expect anything until v2.
