Okay, just one more from me and then I'm done.
I just realized this, but apparently back when I shared this computer (and Adium) with someone else, they somehow gave my account and screenname an alias that displays instead of my screenname whenever I send an IM. I've tried to reset it through Preferences -> Accounts -> Edit -> Personal, and getting rid of whatever is in the Alias field, but it still persists. How can I reset my profile settings to the default? (It also persists in showing a really, really old bit of text I used to have in my profile but long since deleted.)
Resetting aliases...?

Something else I just discovered that's problematic...I can't permanently change my AIM icon. Whenever I log out and log back in, it defaults to the original icon that Mac OS X gave me and I have to change it back manually to the one I want. This is really annoying - I'm tempted to just switch to iChat, as aesthetically pleasing as Adium might be. Sigh.

It sounds like perhaps you've got a permissions issue with your Adium 2.0 folder and Adium can't write out files to save changes you make.... as I've never heard of any of these problems elsewhere, so I think it's specific to your system.
Try this:
Quit Adium.
Go to ~/Library/Application Support
(~ is your Home folder)
rename "Adium 2.0" to "Adium 2.0-Old"
Load Adium
This will be a full reset of Adium - you'll need to enter your account information again. Your buddy list will be loaded automatically when you log in.
If it works then, you can quit Adium and move your logs back into "Adium 2.0" (you'll find them in Adium 2.0-Old/Users/Default/Logs... put them into Adium 2.0/Users/Default/Logs) so you don't lose them. You can also move over any xtras you've installed, etc.
If it doesn't work, let us know - something particularly sneaky is afoot.
