I was wondering if it was possible to prompt for a password if someone is looking at Adium's chat history.

I can't speak for the Adium devs but I don't think so.
You could request it though.

Password locking on the logs has been discussed but our recommendation is to use the OS level security features instead of us adding additional levels of pseudo-security (as the files on disk aren't encrypted, which is another topic.)
