I have a general question, can I use Growl for other programms, like iTunes, and if yes, how can I put them into the application list?

Growl should naturally pick up iTunes. As I'm pretty certain that this functionality was added to Growl. If not you can install GrowlTunes, which came with the Growl download. If you download Growl again, open up the disk image, you will see growl preference pane installer, an Extras folder, and a Scripts folder. If you go into the extras folder you will find GrowlTunes, GrowlMail, and GrowlSafari, amongst others.
You can't just add applications to Growl, as Growl requires applications to utilize the Growl framework in order to work. So not just any application can support growl notifications.
