GrowlTunes now includes a track number in its notifications
I think this must have been a change added in Growl 1.2, but it's not one I'm particularly fond of — when listening to any track listing that isn't an album it's redundant and nonsensical information. I don't care that this track is number 7 on its own album; it's not track number 7 of whatever track list I'm listening to! Is there any way to customise the particular text that appears within the notification (so as to remove it)?

Not yet. This is an option in the iTunes plug-in version of GrowlTunes, which Rudy is working on.

Is this plugin going to be very different from the current app? I just stopped using Last.fm's iTunes plugin because it is so broken, and was looking for a similar way to show the currently playing track (hopefully without beachballing or eating my CPU like Last.fm did) but GrowlTunes currently displays so much information in such a strangely formatted manner that I really dislike it.

The plug-in version is much more customizable than the application version. Rudy recently changed it to use token fields (like the Language & Text pane in System Preferences); when this makes it to release, it should enable you to change the format as much as you like.

In addition to the tokens that define the various tags (artist, album, track number, etc) you can also type whatever text you'd like.
so ultimately the text for a title could be:
(<<tracknumber>>). <<trackName>> by <<artistName>>
with a body of:
<<album>>
<<year>> (<<rating>>)
