How can I turn off Adium sound when contact list is on or off line.

I dont understand what you mean by "on or off line" but to turn off the sounds in the program you go to preferences. Under preferences click on "events". Once there just click the triangle next to each event that triggers an event to happen and simply highlight the one that says about playing a certain sound and clicking the minus button below to remove it.
