Only in the Menu Bar

I was wondering if there were a way to get it so there would only be an Adium icon in the menu bar and not in the Dock at all. I want to try to conserve room on my dock.

It is possible to do, but that will also hide adium's standard menu, meaning you can only access menuitems that are not in the StatusItem menu by using keyboard shortcuts.

The way to do it is to edit Adium.app/Contents/Info.plist manually
