How do I get the menu bar icon to stay there even when Adium isn't open?

you can keep the app open it uses 0.00% cpu when idle .. so you press Command - H and you hide the app .. it will still open .. and the menu bar will be there anytime you need it .. I do that most of the time =D

This is not currently possible. It is planned for the future though.
