According to the Adium wiki, if a user tries to log into a Jabber account, and one has not been created with that username yet, Adium will prompt the user to create the Jabber account. I tried to log into two different Jabber accounts, and Adium prompted me for a password, which was rejected, and I was not allowed to log on. The accounts were my first initial plus last name, and my full name, so I highly doubt that both user accounts have been registered. (I have a very uncommon last name—it's somewhere around the 187,000th most common surname in the US—so it's very unlikely that both user accounts have been registered.) Any ideas what the problem might be?

Adium doesn’t make accounts. Use Psi for that.

I'm almost positive that Adium will register accounts with jabber.org (and only jabber.org) It's how I got my last jabber account registered...

So do I. It worked with PSI but didn't with Adium.
