This may be an easily-answered question that I am too incompetent to figure out for myself but:

How do you edit/change your profile in Adium?

Open the preferences and choose Accounts. Double click on the account(s) you want to change. If you're referring to AIM's profile feature (or something like it), choose the Personal tab that then appears.
