It uses the system spell checker. We're not going to write a rather massive thing when the system provides it.

You can change the language if you right click, then choose the spelling submenu and choose "Spelling..."
In there you'll find a dropdown with installed languages. I have 3 kinds of english in there.

Where do I ctrl-click?
Would like to have some chats with german spelling and other in english, when I chat with forgein people (or like right now writing english in a browser) everything is marked as false.

Check out the Spelling per Contact plugin for 0.8x. Adium 1.0 includes this function automatically.

In the textfield where you write.

Without using the spelling per contact, you can use the multilingual dictionary.
It misses lots of mistakes, but catches quite a few (for me at least)
I'm going to check on that spelling per contact now.

It'd be great if you could assign more than one language to a person.
My girlfriend is Spanish, so usually we talk english, but she's learning french, so we sometimes speak french and I try to learn spanish, so sometimes we speak spanish!
